Mescalito 100% Merlot, 2021, 13%

From Abruzzo, on Italy's east coast, comes this 100% Merlot that puts a fresh take on that particular varietal. Inspired by the ‘zero-zero’ concept (aka nothing added, nothing taken away), 9 days of carbonic maceration (what does that mean?) give this a juicy, bright fruitiness, with smooth tannin and a pleasing mouthfeel. Wild yeast, no temperature control, no filtering, no fining, no sulphur added - a natural wine banger.

Pairing: nothing too heavy meat wise, maybe a simple burger or some chicken.
