Perhaps the jewel in the crown of the Castuo Wines selection. We fell in love with this project in the west of Spain, Extremadura, where winemaker Fernando is producing natural wines from unusual grapes (many of which are actually Portuguese), crafting beautifully pure, delicious wines. Made from 30-year-old Pardina vines, native to the local Tierra de Barros region, this is fermented in stainless steel before being moved to Montilla Fino casks where it is aged under flor for 18 months. A clean golden wine with wonderful sherry characteristics, a broad, dry palate and a saline finish.

Pairing: treat it like a sherry and have it with nuts and olives
