Dappled, Appellation Chardonnay 2023 13%

A famous Australian New Wave Chardonnay from Yarra Valley, this is a complex and exciting taken on the grape. This is a wine known for its "reductive" quality, with aromas of a struck match, and a smokey, steely-ness. It's part of the complexity and integrates beautifully into the rest of the wine, particularly after its been open for a while. Particularly at this age, decanting a white wine like this is usually a good idea, and letting it warm up will do no harm at all. On the palate, a lovely textural richness that continues to improve over time.

Pairing: great savoured on its own but versatile for food too - we like it with sushi.
