A Loire classic. Muscadet, made from the inappropriately named Melon de Bourgogne grape (no Melon character here) is a bright, fresh white wine with an oyster shell character. And it pairs well with oysters, naturally. When buying Muscadet, look for the term "sur lie", which means extended lees contact (stirring the lees is known as batonnage in France) during winemaking, leading to additional complexity and texture. This is 18 months on lees with 4 months of batonnage - elevated!

Pairing: oysters, fish, creamy chicken.
