Ingenium Blanco, Ruiz Jimenez, 2020, 14%

A textured white with a sherry character, this is a genuinely fascinating wine. Organically farmed, with grapes pressed straight into French oak. Vigorous fermentation starts after about 2 days, overflowing from the barrel, with a refill from another barrel every day. The wine then goes into stainless steel, and then back into oak, a mad-sounding process that produces a wine I love. Unique and totally delicious. Quite Christmassy!

Pairing: Paella? The producers suggest sushi, sounds rogue but why not?
